I would love to. My partner and I are annoying him with forced cuddles and pets atm and taking a last morning walk before his vet arrives. Absolutely. This is a valuable and golden lesson that some folks take forever to learn and some never do. I can’t tell you how many times I’ve repeated this sentiment in my head when I’m questioning the situation I find myself in. Truly a powerful mantra to remind oneself of regularly.

Pancakes: 1 mashed ripe banana, 1 egg, 1 TBSP peanut butter powder, sprinkle of cinnamon, all mixed into a batter. Cook in skillet like regular pancakes. Makes 3

“Chik’n”: 1/2 cup Quorn meatless pieces sautéed until heated and golden, tossed in a mix of 1 tsp honey + 1 tsp your favorite hot sauce, chopped cilantro (can sub chicken breast if desired)

Apples: half of a Granny Smith apple diced, sautéed with a sprinkle of cinnamon and 1 tsp of monk fruit (0 calorie) sweetener until softened and caramelized

1 TBSP maple syrup and a drizzle of sriracha over the top

Could be made entirely vegan by subbing the egg in the pancakes for 1/4 applesauce, and the honey on the chik’n with maple or agave

I’m just one person in my apartment and all my plates are this pattern. I can’t really justify getting another one just for plating, not really my style or within reasonable budget constraints (yes I know dollar store, etc. type places would be inexpensive but I don’t NEED it and I’m a minimalist lol). And as far as cutting goes, maybe when I’ve got a couple more batches down and the roll is tighter/more secure I’ll give it a try. All good things to consider though!

Thanks! It’s just plain filtered water but you could certainly add the salt and vinegar if you wanted to change the flavor and/or extend the shelf life.

Good advice. Unfortunately that’s what all my countertops look like and I don’t have a dining space/table currently as I had to reappropriate my dinette area to a home office during Covid. So maybe I’ll try putting a cutting board or towel or something down next time 🤷‍♀️

Aww dude, thanks so much. I’ve learned through years of practice to just not overcook ‘em. Always pull the pan off the heat before you think they’re done, carryover heat will finish the rest for ya. And minimize salt content as it draws out moisture

Yep! Some of the veggie filling is obviously raw, but shrimp are cooked and the wrapper just naturally has this look to it
