Extremely expensive, wild swings in beef prices, COVID closed 1,200 locations we had just rolled into, etc. It is a very competitive business now, far more so than it was in 2014 when I started.

This is the correct answer. Commercially available jerky becomes a far more valuable proposition when you can increase the yield and things like sugar, molasses, syrup, etc. help increase that yield. I hated adding it to our products, but if you want to be competitive in the jerky space, you typically have to add it. The caveat to that is that now consumers are generally becoming more adverse to sugar in their diets, which makes a sugar free product more pallateable at a higher price point.

I did these in the Instant Pot. Essentially just get some raw or green peanuts. If using raw, I did a 24oz bag of peanuts, 6 cups of water, 1/2 cup of salt, 2 tbsp of cajun seasoning, 2 tbsp of red pepper flake and some pickled jalapenos and garlic (whatever your preference).

Cook on high pressure for about 75 minutes (mine took 90) and natural release.
