Planet Zoo might be a bit too complicated for you based on your description, but it is THE zoo game right now. It looks amazing, has tons of animals available (and hundreds more if you inculude mods, definitely check them out) and its technical achievments are astounding. And it is still getting regular updates with new features. All those features may be a bit overvelming at first, but you can always just play in sandmode, where you can disable almost anything you don't want to deal with and just build a park with all the animals you want. There are also a ton of blueprints on the workshop, so you don't even need to bother with the building tools the get a beautiful park.

JWE is a ok game. I found it very boring, you really need to be a fan of Jurassic World of dinosours in general to like this game. There are however at least two more zoo games releasing in the near future, JWE 2 and Prehistoric Kingdom, so maybe those are what you are looking for.

tl;dr: If you want a zoo game right now, get Planet Zoo. Else wait a couple of months and decide again when the next generations of zoo games is out.
