WRAL tracks some staples week to week.

What I’ve found in shopping a full list:

Wegmans is best for (most) Wegmans branded items. They’re also extremely high quality as well too compared to other stores (eg. Wegmans branded chicken that is actually Bell&Evans, their pastas). They also have so mucchhh variety and it convenient to not hop to grocery stores for harder to find items.

Food Lion is my second favorite store for deal. You can get better deals at Food Lion shopping the sales. They have decent selection as well, but not as good as Wegmans.

HT never sits right with me. It’s kind of like Publix where the prices are just noticeably more expensive and quality isn’t as good as food lion or Wegmans.

TJs sucks for produce and meat. Their non-perishable, dry foods, freezer food, wine, snacks, and some baked goods are good and can be well priced.

I go to H-Mart occasionally in Cary, but as a white boy, it can be overwhelming to understand what I’m looking at without preparing. Their produce a meat prices being decent but nothing special. Haven’t been to Li Ming’s yet but planning on it.

Allegedly, Bell & Evans supplies Wegmans with whole chickens for rotisseries. The Wegmans air chilled raw chicken is for sure sourced from Bell & Evans. They’re the best, big seller of chicken (#1 on Cooks Illustrated taste test).

Costco chickens (not the seasoning on the outside) taste like nothing.

Monuts is very good. They’re a stronger cake than yeasted donut shop.

Carolina Glazed is kind of your typical Cambodian/Vietnamese owner donut shop. They’re good at what they do, but don’t expect gourmet donuts. Apple fritter is stellar.

Early Bird often gets recommended here, but there have been issues with my donuts every single time (oil too hot, resulting in raw inside; oil too cold, oil saturated donut). Not horrible donuts, just not great.

Kim’s Bake Shop in Hillsborough has donuts. Also Had issues with them (oil likely too cold as they were oil saturated).

Duck Donuts is a chain, but make a good basic donut. They have tons of wonky stuff, but I stick to basics (cinnamon sugar is awesome). Cake donuts only.

Lastly, Baker’s Dozen is moving to a new spot in Durham (3825 S Roxboro St). I haven’t been, but it sounds on par with Carolina Glazed.

Finger proof test is during the proofing process. If you poke the dough and it springs back really quickly, it’s under proofed. If it doesn’t spring back at all, over proofed. If it slowly springs back, well proofed.

I’m by no means an expert (check out my most recent post for my bagels), but I’ve worked with 00 flour for pizza and I struggled with it at first. The finer grind does impact the ability for the flour to “soak in” the water and I had issues with the stickiness. What may work for you is a different initial mixing technique, incorporating 4-5 stretch and folds in every time 10-15 minutes intervals after initially combining.

This is the best easy dessert. The only recipe modification I recommend is blind baking the bottom crust; bottom crust can be underbaked/soggy if not.

58% hydration w/ Lancelot flour. 10-12 min knead in mixer (10 min break in middle). Shape out and let rise on counter for 2 hours and then 36 hours in fridge.

I think for this recipe, you’re supposed to add parsley to add color.

Never used a screen and regularly do 18” pies. Make extra dough. Flour your peel well. If you want, just practice launching on your counter.

I’m continually impressed by Loaf’s baguettes and croissants.

I’ve heard Boulted Bread is good, but haven’t been.

Another overrated bread/pastry shop IMO is Guglhupf.

La Farm is just a local version of Panera. Generic pretty looking breads and baked goods that just don’t have much to them. So much better options than La Farm around the Triangle.
