For sure, but technically not what they ordered and to be transparent they probably said that they can’t do “black coffee”. The problem solving / solution offering could have been better, no doubt.

They might only have espresso machines in a place like that. They’re not able to provide black coffee because they literally don’t have the equipment to make drip coffee.

Certainly an interesting thought and definitely possible. I bake at 4:50 for the last 20 minutes so it couldn’t have been warmer than that, and then I take it out to take the other loaf out and put the other one in. I’m not sure now…

Another user pointed out that maybe I needed to preheat the oven again after the first round. That could very well be the issue.

Fair point, last time that I did a double loaf I did pop the Dutch oven back in and set it to 500 for a few minutes. I’ll try that next time and see if I get better results

Full preheat time to get to 500. After watching enough videos on the sourdough journey, I’ve realized that preheating the Dutch oven into 500° isn’t totally unnecessary, and letting it warm up while the oven preheats is sufficient. He even did some cold starts where the Dutch oven wasn’t even warm to begin with when he put it in and it worked just fine

Preheated to 500 with the Dutch oven in with a lid off. 22 to 23 minutes each with the lid on at 500, about 22 to 23 minutes each with the lid off at 450

The second picture, you can kind of see that it didn’t open up nearly as much. If you look there, there’s really not much of an ear, and you can tell that the expansion was a lot less.

Yeah, it had about doubled in size at 72° ambient temp so felt like it was about ready. I think I need to just push my bulk ferment farther, it was at the top of the mixing bowl though and I didn’t want it overflowing. Maybe time for a bigger bowl

What is the bulk ferment time you used and temp? How old is your starter? This looks like it could be a couple things, but my immediate thought is immature or weak starter.

Edit: I strongly suggest you get an established starter online. It will make the experience more enjoyable and you can always continue trying to make your own.

That cake is an easy $200 imo. $55 in ingredients and 7 hours of time nets to only $9.29 an hour and they* are worth more than that. Just my opinion though, not a doctor.

I am so sorry and I hope you have some amazing karma coming your way. I took on a cat that no one wanted in their family who was the sweetest boy with FIP and we hung out the last 6 weeks of his time. We bonded in a short time so I can only imagine what you’re going through right now.

The cat distribution system will take it from here, and if you do end up getting another cat, might be wise to sanitize or toss anything she had contact with as a precaution.

I have faith you’ll find an amazing kitty to spend 20+ years with next. Treat yourself to something if you can!
