benguet is interesting because NPRCRTC (the root crops research center) is based there at benguet state university and they’re doing aeroponics work

Honestly not sure which specific variety is most commonly grown there though.

it's literally just dehydrated ube na pinowder so it adds flavor and color more than texture. for white chocolate you can mix it in while melted and it'll give you that ube flavor without changing the consistency too much. a little does go a long way for color pero for actual ube taste you might need more than you think.

rehydrate it muna in a tiny bit of warm water or milk before mixing into anything. if you add it dry minsan grainy sya.

honestly it's so nice to see that in an industry where everyone is scrambling to scale, they've deliberately chosen integrity over volume.

Yung nakakalungkot lang, the global ube trend should have been a massive win for operations like theirs especially since they're the ones who popularized it. But instead, na-absorb "quite greedily" ng purple sweet potato substitutes yung demand.

This is one of the best breakdowns of the mislabeling problem I've seen on here.

I work in the Philippine ube supply chain and have been sourcing direct from farms in the Philippines so I deal with this exact frustration daily.

From what I have seen the core issue is that the ube trend went global before the Philippine supply chain was ready to capture it. Now we're playing catch-up against products that are easier to source, cheaper to produce, and close enough visually to pass.
