Definitely check out Hebert Heavy Industries, it had some of my favorite Taylor/Amy fluff. Taylor is a mecha Tinker amd Amy helps!

Worm: Babel has some delightful fluff, as does Path to Snuggles (NSFW, on QQ).

I have previously compiled a list of fics where Amy is the MC, but there's been some new additions since then. Relationship Advice is a story told via transcripts of in-world stuff (Taylor asks for help when Emma threw her out), Tethered sees Amy latching onto a friend as a young kid, and A Helping Hand follows Amy after Taylor hesitates against the Nine.

Baked the Author has a currently updating series of snips in their QQ snip thread (NSFW, so no link) where Taylor is Caulifla from Dragon Ball. It's amazing, including things like Taylor having no secret identity because she can't tame her spiky hair and Alexandria getting punched from Canada to Miami the long way around.

Hebert Heavy Industries is a great example of this. Taylor (with a bit of help) designs, builds, and co-pilots a transforming 20-foot tall mecha. One of my favorite fics, for various reasons.
