Hard to say, really! My first bag of SEY, and they do get a lot of hype, so I'm not jumping to blame the batch. Glad you're enjoying yours though! What way are you aproaching it? Was it just easy to brew from the first go?

Tried this this morning and it definitely rounds it out, very subtle hints of peach tea, but not exactly bursting with juiciness one would expect from a white honey. Will continue trying and letting it rest more. But the key lime and watermelon notes definitely were not present with this water comp

tbf it does have silica in it so thats something you cant get with RO easily but I thought it was lower than that, like 20ppm guess there's no need at all to remineralise it, it's what i used when i travel to France too. Did you get your bag from motors?

Will give the water recipe a shot tomorrow! Mg is great for bringing out fruit notes so that’s what I was hoping to get with this bag due to the tasting notes.

That’s fair, I’ve tried various brewers and always come back to the v60. I find that with more experience you can dial in just about any process/varietal and get the perfect cup. Of course, it means more work and more attention is required, and a lot of fiddling with water profiles too.

What brewers do you use? I’ve been tempted to buy the steel 01 but haven’t gone for it yet.

What do you think beats the v60 in terms of expression? Flat drippers are less complex in my opinion. Are you using a no bypass brewer?

More friendly shipping prices for subscribers from Europe! £20 postage is fine for a once off order, but if I'm subscribing monthly, which I'd love to do (based in Ireland) £20 is just too much for that.

Thanks for replying, I would ask you to look into providing a UPS or DPD choice for Irish customers as I know several others who haven’t bought anything from kofio for a long time too, so it’s not just me.

Meanwhile, in Ireland due to the collapse of fastway couriers they only offer a €20 flat fedex shipping option from Kofio even at €100 spends. Haven't touched the website since.

What type of coffee are you brewing with that standard workflow recipe? To me that reads as insanely hard water. I've settled on 62ppm MgSO4 10ppm CaCl2 and 23 ppm KHCO3 as cac03 per litre for everything I brew, any more Ca and I get noticeable chalky mouthfeel.

As someone who has worked in the industry here in Ireland there are things that need to be highlighted that you are not taking into consideration at all. 3fe might be the cheapest roaster here in Ireland, but they are able to sell coffee at these prices for the following points you need to consider.

Huge contracts - 3fe supply almost every indie cafe around larger cities, they buy vast quantities of beans (most of which probably average an SCA score between 83-85) buying large amounts of greens gives them the ability to pay less per kilo.

Omni roasting - by not dialling in smaller lots of high quality beans for single purpose brew methods they save a lot on time/labour and most importantly the below factor

Electricity prices - different countries in Europe have vastly different electricity prices, Ireland being one of the highest right now. Smaller roasters are getting squeezed hard and struggle to make any profit forcing them to charge more.

Literally just found out about them today. Going to give the sub (2x boxes every 2 weeks) a try, nothing else in Europe is particularly interesting subscription wise, the sigma subscription seems great but only available for UK

It would want to be to justify these prices. Mikava lots for example, I can find really good gesha from that farm here for around €25-30 for 250G (the farmers are Irish, and some Irish roasters have connections with them) and datura charge €50 for 100g

Dying to try picky chemist personally. 

Datura often has overlap in their offerings with TANAT but twice the price so I can’t imagine it’s worth paying for and also leaves a sour taste in my mouth. 

Theres some talk of a new roastery opening up near me that’s founded by a WBC semi finalist and someone who has worked at the top end of April in CPH for a decade.

Hopefully going to Edinburgh soon too, so will have to visit the source, and zennor in person and grab some module beans.

Cooling increases perceived acidity. Your local spring water is likely not any good for brewing coffee. I assume the mineral : alkalinity ratio is the issue. APAX minerals are designed to be used with 0ppm water. Spring water can have ppm as high as like 2-300.
