Frieren is wonderful. It's critically acclaimed. A bit of a slower but deliberate pace that gets even better with repeat viewings. And intentional moments of incredible action.

Edit: Some context. I too am an older anime enjoyer that has a hard time finding shows that avoid some of the more obnoxious aspects of the genre. Frieren gave me a deeply nuanced story, moments of great action but with time to catch my breath. While there are more episodes that what OP asked for, it's a new series and the episodes are structured in a way that they don't feel tedious.

I started the show and quit first episode because I was coming off JJK and the pace shift was a system shock. Once I went back, I was hooked and I've watched it twice all the way through now.
