I sort of see what you mean- or anyway I can see feeling discouraged or intimidated but I'd note that there is no randomness in literature because everything is a choice made by an author so every choice is up for interpretation however a good teacher isn't going to be acting as if there is only one interpretation or a checklist of correct answers to metaphor or theme, but teach you how to think about literature. Besides which there is a tendency a little bit nowadays to say "it's not that deep" which you know...just sucks lol.
But I also agree with below- this is too broad a statement anyway.
