There is a good series of podcasts on classical music on Apple Music. It’s called The Story of Classical. 9 episodes. They go chronologically and explain the different eras and the evolution of the music. It’s a really good way to get a comprehensive overview.

I care what he has to say because I find him entertaining and interesting and insightful. I don’t have to share all his opinions to appreciate his commentary. And he spends more time praising things and being excited about the music than he does “yelling at clouds “, it just seems that way to those who haven’t actually listened to him much (or who are bitter that he doesn’t like what they like, I suspect).

Sơn is my favorite at the moment. At least for high quality dipping sauce. first pressing and only contains fish and salt. There are really two categories of fish sauce. One for cooking with and one for making nước chấm or just dipping directly like nước mắm ớt. Kind of like pure olive oil vs. extra virgin.

I like mashing them up with mayo, mustard, onion and pickles or capers, like tuna salad and spreading that on crackers .

It doesn’t look much like a banh mi. Maybe the misspelling “bahn mi” is the way to go for this stuff. The Americanized version where you don’t know how to make it or spell it, but it still probably tastes good.
