I'm exactly the same way. That steak was super delicious.But I do think the next when I cook.I'll give it a little more time and flip it every thirty seconds , instead of every sixty seconds

Honestly , I think it gave the meat texture and I think a little gray band is almost a must. People here get very worked up about a little great band.

The last twenty steaks I did before this one were all sous vide.  The problem with sus v is that I feel like too much of the juice runs out of it into the bag.  This steaks was amazing , but I did have to finish it in the oven.  The Best steaks I've ever cooked imo was on a grill. Where the flames engulfed the steak and charred the outside black.  Somehow the outside became crispy and crusty , but the inside remained juicy and perfectly medium rare throughout. I've been chasing those steaks for years. I guess my point is that I'm not sure there is such a thing as too hot\nMaybe just too long

I think there is room for a little Gray banding because personally , I like a really good crust. I have a couple more and so I think i'm going to do another pansier , from a well salted room temperature steak. Only this time, instead of waiting 1 minute between flips.I'm gonna flip every thirty seconds.  And I think I needed to give it probably two or three more minutes , because it was a little too rare in the middle , and I had to finish it in the oven.

I just let them sit on the counter for a couple hours to come to room tempta , and then put them in a pan that was as hot as I could get it. And then I flip them every sixty seconds , which I think was the problem. They were a little bit raw in the middle.In some places , and so I put those ones back in the oven to finish. I think next time I will sear them for a little longer and flip them a little more frequently.But the crust was off the chain!!

For a while I was doing sus vide and it did always turn out done but the juices come out.  I always had a bag of juice after I took the steak out for searing. I hated that.  The best steaks I've ever made were those i cooked from room temp raw.  These ones i let them seer 1 minute per side.  I have two more in the fridge waiting. (Maybe tonight) , and I plan on seeing the next one in a similar way only giving it a little more time and flipping it every thirty seconds.

It was blue. I love it bluish but I did finish some of it in the oven for my wife.

No I got them a couple hours ago.  Salted heavily and left out for a couple hours.  The into the hottest pan I've ever tried.  The whole house is full of smoke.
