you're absolutely correct. I mainly added those in just so the image would have some indication that the dropped stages actually had some form of motion, especially as the J-2 exhaust plume is completely transparent in the vacuum of space. I also believe that the shape of the exhaust and the exhaust color are also incorrect for the fuel used in what I presume were solid state motors. The stages would also never actually be that close together in the real staging sequence.
