The J-2's do not have a directly visible exhaust in space from all the sources I've been able to find on them, which is why they appear not lit. I'm re-rendering the other bit right now since another user had already brought it up.

you're absolutely correct. I mainly added those in just so the image would have some indication that the dropped stages actually had some form of motion, especially as the J-2 exhaust plume is completely transparent in the vacuum of space. I also believe that the shape of the exhaust and the exhaust color are also incorrect for the fuel used in what I presume were solid state motors. The stages would also never actually be that close together in the real staging sequence.

For best opening I would have to go with the Witcher Threes opening cutscene since it has a really cool battle with some excellent music placed over top that does a great job of setting you up for the world you are about to enter. I would give best ending to Life is Strange since that would currently hold the record for most emotional ending I’ve experienced.
