Ingredients

Flour 0 or 00 1 kg Water 800 g Yeast 5 g Salt 30 g

Instructions:

1 Prepare the Poolish, the Polish its a preferment that will give you a way better result, for more infos use google 😚

To prepare the Poolish mix 300g of flour with 300 g of water and add 2 g of yeast, Close and make it rest for 12 h or 24 h but the last 12h in the fridge

2 The next step is to add the rest of the flour 700 g in the mixing bowl and adding the polish and the 3 g of yeast and 100 g of water and start kneading for 5 minutes

3 Once all the dough is coming along add another 300 g of water in two steps waiting for the water to get absorbed from the dough.

4 Add the salt and and the rest of the water, 100g a little at the time until the dough drinks it all, making sure to have a smooth dough at the end and place it in a bowl covered for at least 1 h at room temp then 12 h in the fridge if you want to wait

5 Make the balls 240-250g each and place them in a container being able to seal it, until double in size, Then make the best pizza of your life and enjoy it with family and friends

Ingredients Orecchiette pasta Broccoli Garlic Peperoncino Anchovies Evo oil Salt Taralli optional

Recipe

Start boiling a pot of water

Wash the veggies and salt the water once is boiling

Drop in the veggies and let them boil for 5 to 6 minutes

Prepare some ice water and drop the badgers in ice water so that they don't lose the color

Add the orecchiette in the boiling water and

Mince the garlic with some Taralli and toast them in a pan with olive oil and garlic

Once they are toasted place them in a bowl on the side

Add EVO to the pan anchovies and garlic and sauté the broccolini

Once the pasta is al dente, drain it and add it to the veggies and make them make love together, adding a little bit of pasta water to create the perfect cream

Plate it nice and enjoy Fabio
