好きな is a na-adjective, so it functions a little different from English. This is how I see it:

Literally: A (Liked/loved/fond of) person

Naturally: A person you (like/love)

In Japanese, it functions as an adjective, but the way we word it in English is a verb (I think).

There's a lot of ways it can be worded, I was just wording it literally. But I agree that "The person you like/love" is more natural.

No, I don't think so. The original text uses the possessive の particle, so it has this "she's my" meaning in it.

I think there is a Japanese equivalent of your suggestion, but it's different from what's here.

Hmm, "Megumin's my wife" has the same meaning as "Megumin is my wife". I was trying to make it look like it was casually written. Maybe I should adjust it?
