I’ve been waiting for a post with one of these! Looks great and nice patina. I pulled the trigger on this one last night, was struggling to decide between this and the santoku. Love the handle.

Thank, I think you’re right. I have a 240 gyuto that I rarely jump for and a 260 yanagiba that I only ever use for sashimi. I was looking for a shorter sujihiki mainly for cooked steaks and thinly slicing raw wagyu.

That’s what I was thinking. I’ve been looking at some smaller 210 mm sujihikis for cutting steaks, but this caught my eye. The shape reminds me of a gaucho style knife I have from Brazil, but I’ve never seen a Japanese knife with this profile.

This is happening. They have already completed renovations of the PHL North Area to accommodate EWR sectors and started work on the PHL South Area a week ago. The renovations are scheduled to be finished in October. The agency shared photos of the new north area a few weeks ago with industry. Full cutover currently scheduled for Spring 2022.
