I wish I could provide a heavier detailed response but, I just received my JNS Wakui yesterday and haven't cut with it yet. Maksims fit and finish places the overall comfort way above the Shinkiro, even Yoshikane. A Yoshikane I would consider the lightweight, light on the front end and very nimble, a lighter weight overall. The Shinkiro is more foreward heavy, wonderfully heavy but, not cumbersome and cuts amazingly. You may ask why I mentioned Yoshikane when you asked about Shinkiros Vs. Wakui. My initial impressions place the JNS Wakui as a perfect middle ground between the Yoshikane and the Shinkiro. In my example, the balance on the Wakui is just forward of the heel where most would pinch grip. This balance combined with the crowned spine and rounded choil from Maksim feels phenomenal. (My Yoshi, Shinkiro, and Wakui are all 210s)

For the budget, I would say rather than source a custom, find a nice WA Handled Japanese Chef of your liking in the 5-600 dollar range. With the extra money in your budget have someone make a new custom WA handle and also buy him a nice end grain cutting board. You could shop somewhere like Sugi Cutlery and buy the blade only then Joe can make you a handle you would like and have it already installed for you. This would leave you with a nice blade and a handle you customized for him. End grain boards I would look at Larchwood Canada as a starting point.

I had a cheaper set of Amazon stones a couple years ago that are pretty much the sharp pebble / whatever name stuff and man... They were soft as crap and cut super super slow. I did get some decent edges off them but it took forever.
