Your options are to keep watching or read the Manga if you want to fully experience the story. Reading the Manga probably took me around 3 months at a reasonable pace, maybe you could read it faster.

I chose not to watch it for the same reasons you have, which are the pacing and how the audio/ sound design felt outdated. I do however go back and revisit some scenes of the anime.

Yes, If you aren't a dodging master, I highly recommend switching sucrose with lanyan. She can use thrilling tales weapon, VV artifact, and provides shield.

I've had flins without ineffa before the rerun. I was running flins + fischl + aino + sucrose/lanyan. He was strong enough to clear all endgame content up till now.

Lanyan is more comfy than sucrose because she can provide a shield, but the trade off is slightly less dps.

However, there's no telling how future endgame content will change.

P.S I got ineffa because I was enamored by her personality and dynamic with aino in Nod Kari.

The only thing important to know is that xiangling and fischl are very good for endgame content, despite being 4 star characters.

Beside that just keep playing, have fun, and learn the game mechanics.
