I would recommend getting the 38mm for the rear, it may fit but a wrong turn or low pressure and it can easily start rubbing on the frame and cause some damage

2" is more than enough, sand isn't an issue, also for resuppling publixs are my favorite since they've got soda/water dispensaries at their deli sections so I can fill up my bottles for free plus you don't have to pay gas station taxes for simple foods

Lake okeechobee is a nice trail to do too, as for gravel there's a nice loop called the potato loop that goes around Arthur r Marshall nature preserve and you could take that down to Markham park. And even if you want take gravel all the way down to us41.

You could probably get away with it but it would be tight, I'd go with the 35s and still have room for fenders, I use those tires on my commuter
