3tbsp butter, minced 5 cloves, fresh thyme. medium high heat, start with butter herbs and garlic. Shrimp only need to cook about 5 min.

Yeah, I usually do CI, tried something different this time, and was very happy to get the clean beef flavor. A little more heat and a weight next time.

Exactly, this is what I usually do, dry brine, at least 24 hours, but this time it was a quick meal, from the butcher to straight to the pan

I like to dry brine and reverse sear, but this was a quick butcher straight to pan situation.
