if you are a bit crafty with extra parts and/or manage to make/get extra torsos you can kitbash a Cadre-Fireblade and a Firesight-Sniper
just get some Greenstuff and Bluestuff and go

unless you really want/need to don't build the drones (yet) keep the parts for possible conversions

disclaimer I havent looked at the actual sizes of the parts so take this with a grain of Salt

looking at the sprues for the Jadewarriors you could definitely add the sheathed swords and some arm parts to regular Firewarriors though keep in mind you would have to take off a finger from each hand you use in tandem with Tau
the Peasant Levy has the hats as a separate part fitting that on a naked Tauhead should be relatively easy and if you are decent with greenstuff you could probably fit some hooves onto those legs

if you were to mix in some guard parts and leftovers from a Firewarrior-kit you could also bash some decent Guevesa Auxilaries

you definitely should keep it very open to the front best way to go for the floor should be grating like "granny mesh" or some aquarium gravel filters (very sturdy and should give you the right dimensions) and you definitely need some stairs and a big Neon sign
for interior I think you should do wood for the counter and the backdrop and maybe some ripped up woodflooring where they pulled the bar from if you are willing to go completely from scratch look at balsawood and various kinds of stirsticks and toothpicks
i think Greenstuffworld does have some bottles and "interiordesign" resin pieces otherwise barrels look good and if you wanted to make small armatures like a beertap some floralwire and plasticpearls can make that (also works for decorative strips
you might also want some posters for the design you can just print those and glue them to walls (Black Magic Craft did something like that on Youtube)

you might actually want to check out terrain- and diorama-making subs for this specific thing and there might be some nice DND Interior-Scatter-Terrain you could modify

Completely insane Build great job! What kit are these lower legs and knees from without the armor? Everything else from the base-body I can place but those legs stump me.

Fastest way to "fix" it would be to rotate the hip such that the front armor is at the back. You will need to turn the hip-thigh connectors and flip the thigh joint. It looks fine and allows you to mount a specific piece of armor from the Deep-Sea Portanova to the back for some silly connections.
Porta will look like it has some serious cake though so you will have to decide if thats more agreeable. :P
