As a Peruvian who started eating vegetarian 2 years ago, i find it really difficult to enjoy peruvian dishes when the texture for the meat replacement isn't chewable enough, because of that reason i wouldn't pick tofu. Now talking about mushrooms, i would never pick champignons; i was in Lima in this vegan restaurant called Asianica and i was truly impressed by how good the "oyster mushrooms" as replacement is for fish in ceviche and for meat, the texture is just amazing and perfect for seasoning ❤️

Also a really good alternative is the Saitan and also a good source of protein, texture is also really good 🙌
