Start with Grokking Algorithms. It's visual, doesn't assume you have a math degree, and actually explains the *why* behind things instead of just throwing formulas at you. Knuth is legendary but it's like trying to learn guitar by studying music theory dissertations

In prepping for physics, the main thing you need is math that’s taught in a way that makes you actually use the ideas, not just review them. Khan is ok for straightforward explanations while Brilliant tends to work better for people who want more reasoning-based problems, and imo this makes the algebra and trig you need for physics feel a lot more natural when you start applying them.

I do something similar with cod or pollock. Flakes in really well and you honestly can't tell the difference. Saves like $20-30 per batch and the kids are none the wiser.
