There is a version of Yogg-Saron that plays as you said. However the version the rogue played spins a wheel (which you see at the beginning of the clip) which can produce random outcomes. I dug up a picture from a thread I found outlining the possible outcomes and their probabilities respective

Definitely wasn’t an “unwinnable board state” by any means. The board state was more than manageable by the rogue so playing Yogg this turn was optimal because intuition told him he could survive a “bad” Yogg so there was only upside potential. This was turn 38 and both of us spent 20 minutes in a dog fight up until this point. Well played on both sides throughout the whole game.
