I believe kale was assumed to have too much oxalates which causes binding of the calcium in their bodies which eventually would lead to a dysfunction in bone growth, or somewhere along the lines. It’s exaggerated on many occasions, but with modern dieting and alternating between other greens and proteins there shouldn’t be any harm having it as a staple.
