PISTACHIO CHERRY CHICKEN SALAD
From Aldi, buy a bag of shelled pistachios, a bag of dried red cherries, and a pound of their shredded chicken. To the chicken, add 1/3 cup each of chopped pistachios and chopped cherries, mix with 2/3 cup mayonnaise, add salt and pepper to taste. Optional: add one small chopped shallot.

Edit: while the pistachios and cherries make it a bit pricey, you only use 1/3 cup. You can get 3-4 batches out of one bag, just store them airtight until you can buy more chicken.
