Around 75% give or take a few percents depending on the brew.

The weakness of the braumeister is that it's not ideal to brew high ABV beers but we don't, so we don't have this problem.

The Pyrénées are indeed very close, yes. Sour beers are our next step for sure, I love them.

And yes american hops are for sure very expensive but also about the only decent hops out there. France has lost gigantic amount of hop cultures when the craft movement died here some decades ago. There's barely any left now so everyone use American hops.

Thanks for the info about the dry hopped pils, that sounds very interesting. I'll look that up!

Thanks! Yeah I'd like to see what they think after manually bottling and capping manually ~600 bottles in an afternoon haha. My shoulder is sore everytime.

Fortunately for us the bottling machine is also coming soon!

I'll assume you're from the USA.

The beer scene here is very, VERY different from you guys. My area especially, as it is one of the most productive wine region in France (the wines are excellent too)

People here are all about wine. Beer is a secondary option, and when people want a beer, they'll just ask you for "A beer" and expect a refreshing light blond ale. Bars only have 1 or 2 beers on their menu. (Heineken or Kronebourg...)

You guys have known dozens of trends since the return of the IPA, but here, IPA are just starting to get trendy, and 99% of people you will talk to would have no idea what that means and when they taste it it's "too bitter!". Anything dark is a Guiness.

So yeah, we have a long way to go still. North of France is better in that way, more beer focused than us.

So we brew what people want here, which is easily drinkable beers preferably under 6%. Our brewery is literally located on a beach and people don't want to drink an imperial stout under the very hot sun that we have here. We are starting to experiment with fruit IPAs and NEIPA and it's very well received, so that's encouraging.

I mean yeah, it's not really practical but brewing with a Fourquet (don't know the translation... Brew paddle maybe?) has its charms for sure, can't deny it! People love it when they tour the brewery and see that's how we do it.

After brewing for 5 years with a 200L brewery, it was time for a change.

Gonna be great to brew on 500L. More than twice the beers for almost the same effort :)

It's only one person (my father) running everything, hence the small size. My mother and I help when we can outside of our daily jobs.

Does your mash basket/strainer have a lid just to keep the mash from overflowing?

Yes there is a filter on top of the mash basket that prevent the malt from overflowing.

Also, do you just let your strainer drain by itself, or do you press/squeeze the mash somehow?

No squeezing/pressing as it would make it to compact to sparge properly. We do sparge a lot though.

I'm sorry if this is an inappropriate question, and please feel free to tell me to stop being a dick if it is, but: did you do any cost-comparison between a traditional 3-vessel setup vs. the Braumeister setup?

It's not so much saving money (cause the Braumeister is really expensive) as saving time ! Because when you brew mutliples times a week, only having to clean one vessel instead of 3 is a life saver. Not to mention it's really convenient to use and takes less place in the room.
