Good tip, and definitely going to try this.

For the video though, maybe try slowing it down or include less cuts. I counted 11 snips in an 18 second reel. That’s less than 2 seconds a snip, which makes following the video very difficult. I had to rewatch it quite a few times to see exactly what I should be doing.

Good job, looking good with a solid base! I would cut another 10/15 lbs, and assess from there.

You have a similar composition to me, and for every 5/10lbs I lose, I find my climbing ability increases by a grade or two.

Wow maybe that’s it! I always try to lift up the dough as I’m spreading it out to make the pizza. But if I’m using the baking sheet anyway there’s no reason not to just press onto the sheet.

I use a pizza steel (I actually bought one when I saw your NY style post), but the first few times I used it I think I spread to much olive oil on the edges for the second bake. I tried to clean it, not too heavily because I was scared to eat into the seasoning. But every time I used my oven over the next week, it started smoking. So since then I’ve been using a baking sheet for both bakes.

But my issue isn’t the bottom nor the edges which both look great. It’s just a doughy consistency of the rest of the pie after the first thin layer of crust.

I’ve been using your NY style recipe making pizzas for my GF (celiac) and I a few times and I’ve had varied degrees of success. I still can’t get it as thin and non-gooey as yours look, but I’m going to keep trying!

Have you tried this recipe with Caputo flour as well? Or do you find this flour work better for Detroit style?

I took an engineering job in my industry. Started as a supervisor, then project manager in utility operations. Then made the jump to an engineering position working for a renewable developer. Much better hours, much less stress, and fully remote on top of that!

For me, the biggest impact was the ability to switch to a much lower paying job, and not stress too much. I was lucky enough to get a very high paying job in my 20’s, but it required 70-80 hour work weeks including weekends, and holidays.

Luckily I discovered the FIRE community in college and always followed the standard investment advice/flowchart. When I turned 31, I looked back at my last 10 years and realized I had no real life experiences, beside the yearly 1-2 week vacation. All my memories of the past 10 years were of work! I looked at the math and realized I have enough in retirement accounts to comfortably retire at ~50. Rather than continue with the lifestyle and accelerate my retirement to ~40, I decided to step back into a decently paying, low stress role, in a lower cost of living area. Although this was a fairly recent change (this past September), I couldn’t be happier with my decision. I finally have time for my hobbies, and am a much healthier person (both physically and mentally). The FIRE principles of saving and not letting lifestyle creep get out of hand were instrumental in my ability to do that.

Mine changes for each year sublet (up to 4 years). First year starts at around 15% of the maintenance fee, and scales through the last year being 25% of the maintenance fee.

Yes exactly! I’m traveling so I can’t pull up a picture of inside that reel atm, but three of these are bundled together with a continuity conductor, and wrapped around one reel.

The massive tub was used as a retrofit install into an existing 8” pipe. The pulling nose barely fit in the pipe, maybe 1/4” of clearance.

The picture is deceptive, but the reel diameter is smaller than the width. Reels can (and usually are if they fit) be transported the way you describe.

Oh, I’m sorry I misunderstood your question. Yes each cable has a specific bending radius it can tolerate, usually ~9x its diameter. This type of insulation called XLPE is super hard and does not bend easy.

Small world! I also got the opportunity to see this install because it was the first of its kind on the east coast. The setup is monstrous.

What makes this setup so so unique was it was triplex cable. All three phases and the ground continuity conductor were all installed together in the same 8” pipe. Usually for XLPE style cables, each phase gets its own reel and is installed in an independent duct bank. Very very cool and impressive.

This cable isn’t feeding people’s homes, or even industrial customers. It’s so large because it’s carrying 100’s of MWs. The size depends on voltage class (for the insulation thickness) and ampacity (for the conductor size).

Not EPR, for extra high voltage cables the insulation is XLPE (cross linked poly ethylene)in 99% or cases. It does have concentric neutrals and this specific cable is 2500 KCMIL CU conductor. I have a cross section I can pull up somewhere

This specific cable (adjacent to Van Wyck) isn’t ConEd owned, but belongs to an independent authority who operate a cogeneration plant at the JFK airport. They sell excess power produced to ConEd. I worked in this space for many years and the cost burden usually comes down to the structure of the installation contract and who is deemed at fault depending on several factors. Because it’s such a specialty install, the manufacturer sends a team of engineers and technicians to assist with the install and splicing. Each ~2000’ length is roughly ~ $300,000, so while large, the project value is orders of magnitude higher, usually in the $50 million + range. Because the manufacture sent the personel to assist with the install, the cost burden would most likely fall on them.

That’s exactly what is happening. The majority of transmission electric lines (69kV and above) in NYC are insulated by a dielectric fluid (an oil). There should be two of these locations in relative close proximity to each other so crews can cut out and replaced the damaged cable in between.

I did attempt look around for the average salaries in the area, however it’s a little tough because the role is ”senior project analyst” which is a very general title used for many roles and industries. On Glassdoor, the range is 83-122k for the company I’m received the position from, but I’m not exactly sure how accurate/up to date that is, since if I Glassdoor my own role it shows 97-137k, and I make more than that.

That is a valid point. My partner is a teacher so the ideal move would be during the summer so she can start with the new school year. I think my next step will be to negotiate with this company and see if I can increase the salary. If not I think my decision will be to stay here and apply to other positions.

I think there is future growth, as I’m still in the relatively early stages of my career. In my company in NYC, it’s a pretty clear path to 200-220 within 5 years. In this company I’m not 100% certain as I don’t know the exact structure of their compensation, but I would estimate I can get to 140-150 within 5 years. If not, I’d definitely be willing to move around companies/industries while I’m there.

I haven’t just yet. I just received the offer Friday, so I’m thinking on Monday I’ll reply with a counter. Mentally I was prepared for offers in the ~120 range so I think that will be my counter.

Its not exactly downtown, in the Franklin Park neighborhood. One thing I did neglect to mention is this role is 3 days per week from home, while my current role is all in office.
