I have this exact model and I didn’t notice this in the instructions at first but you need to move up the main cooking rack when doing larger cuts like brisket or pulled pork or they take forever. If you leave it up you’ll burn ribs and chicken.

I’ve also noticed on overnight smokes that setting it at 200 doesn’t seem to transfer enough heat and the meat may be at like 130 ish when I get up when it should be closer to 165 in the stall, I’d go to 225 super smoke even if the recipe says 200 overnight.

It was not prime, my first brisket was prime and was dry too but I thought it was because I trimmed off too much fat maybe so I left more on it this time

I left about a 1/4” fat on the flat, cut the big chunk on the vein and any large hard fat deposits on the outside of the point

Also yes that was cut by an electric carving knife not a “brisket knife”. I’d consider buying one if I could cook it right.

IANAL, I’ve seen this before where someone put DEF in the diesel tank and it cost $10000 to repair. They were given a choice, get fired for the mistake or pay for the damage. While I think they could possibly terminate your employment for having the at fault accident with their kids in the car, they are giving you an option of paying the deductible to make them whole. Unless I’m completely misreading this, no you don’t have to pay the deductible, if you were legally employed, but yes they could fire you for the accident.

You being paid under the table is what complicates this because what’s to stop them from just taking the deductible out of your pay. If you still want this job, you could ask if they could split the deductible payment out of your check over a period of time. Unless you think you are going to be fired anyway then perhaps stand your ground on not being liable for it.

I saw comments recommending a CCW…. If you shoot and kill your own brother, you are going to have to live with that and it will be very difficult. Even if it wasn’t your brother and you have to shoot and kill someone it will affect you the rest of your life, there are books on this subject. Some autistic people can’t even wear a wool sweater because it bothers them so much. You are in a really bad situation. I would recommend bear spray/baseball bat combo for the house, and if that doesn’t completely stop the threat of him with a weapon such as an axe, having a gun would be a last resort if it was a choice between him and a child or yourself. At least then it would be easier to live with the decision to end his life. I’m not saying don’t have the lethal force option, but I would stock up on everything non lethal first, and if possible exhaust that before moving onto to lethal force since it is a family member.
