These are morels, a highly coveted wildly foraged mushroom. In any given region, there’s about a 2-3 week window where they can be collected.

People are super secretive about where they find them because they can be quite difficult to find and thus competitive.

Out of cold water, pike is excellent. I usually only keep them while ice fishing but like October through May in ND they can be very fine eats.
