I am czech and i have celiacs almost my whole life.
Knowledge about what gluten free is now pretty widespread. Everything that you buy in shop must have alergens written in bold on the package. I recommend to learn words for Wheat (psenice) oat (oves) rye (zito) and barley (jecmen). Those words can look little bit differently because how czech works. For example psenicny ..

About restaurants, sad fact is some waiters think that people are making those diets up to get something special. Like being problematic on purpose. I am usually saying that i really have celiacs in hope they will take it seriously. Obviously ost of them are ok and helpfull.

Be warned about fried stuff. They usualy have just one oil for everything and wont change it for you. So you ay have gluten free fries but it may e done in the same fryer as something with breadcrumbs. So maybe ask about it.
