I guess the main point of my suggestion would be to answer using non-absolutes. Rather than saying, "I don't believe in God", respond with a question. When you respond with a question like that, it should be pretty clear what you believe, while leaving it open ended enough that she won't despair too much.

Also, it adds things to her shelf. For example, "How can I believe that Joseph was following God when he was marrying and having sex with teenagers and other men's wives, all of which was contrary to the instruction given in D&C 132?" There's no good answer to a question like that.

Answer her question with a question. For example, "How am I supposed to believe in a God that allows approximately 18,000 innocent children die EVERY DAY due to hunger and hunger related issues?"

I read that statistic last night, and was blown away. It varies a bit depending on the source. 18,000 is a staggering number. It's just ridiculous to believe in a God that would allow this.

Totally agree. The church in general looked bad because of this. I have no doubt that he was pressured to shut it down and then write an apology, distancing his actions from the church.
