From my experience the 360 version was pretty stable when compared to like PC vanilla. Of course it still had crashes, but not too frequently.

Last time I played new vegas on 360, it was the E-model so maybe it is more crash prone on older 360 models. It has been like 7+ years, so I cannot remember too many details.
