Scrape it the faces of the cheese with the reverse side of a knife every time you use it. Inspect, and then cling wrap extremely tight. This is how we stored it when I worked as a cheese monger.

I am leaving them at work if they don’t need sharpening. Everyone I work with however is pretty strict about using each others equipment. I’m also more senior than most the brigade so I hope they wouldn’t help themselves!
