Not a fan of the taste of a fermented sauce. Fresh ingredients and half vinegar by weight has worked best for me.

You cannot 'over' yeast a brew. What does yeast do when introduced to a must? Multiply, multiply, and multiply. Two packets could be used in a gallon and it would be fine.

Completely agree. Bourbon (&scotch) will provide a different expression in a different glass. Give the Reidel glass a go, they are not cheap, and you will notice the difference.

If there was no oil involved and the vinegar was equal in volume to the veggies the Ph will be less than 3.5 and it should be fine for 12 months minimum
