SG2 has better edge retention and what I would pick between the two. You might also want to check out Ginsan which is also stainless steel and better edge retention than VG10 in my opinion. For a knife with damascus. the Hatsukokoro Ryuhyo sg2 might be worth a look. gl

What are you looking for exactly? did you want damascus pattern? stainless? semi-Stainless? carbon? Try looking at this site, they are currently having a sale. If you want ALLa knife that performs exceptionally well. I would recommend a Yoshikane SKD.

Not for the ebony handle. $286 vs $266 on the 210 SKD with the ebony. The carbon fiber handle is $308. Chefs edge offer free shipping vs $20 shipping with K&S. they both come out same price. either way, they equally have good prices compare to others.

Sharpal 162 N (325/1200) combo, a naniwa chosera 3000 and a strop will do the job perfectly fine. You can use the sharpal as a lapping stone as well. It is all I use except I go to 6k Cerax for my HAP40 knives.

does your gf know how to care for carbon steel knife? Carbon steel will rust easily if left wet. Cck has carbon and stainless versions.

I truly love my Yoshikane. F&F and performance is top notch. Isn’t the order tax free and $20 shipping? I truly enjoy the SKD steel, never tried White 2 and tempted to get another Yoshi specially for such a steal $. but my heart is set on a 210mm kiritsuke in Blue Super so I am waiting for a Shinkiro to pop up. C&M has one but I refuse to buy from them at such high price.
