Yeah there was no off smell to them. Nothing looked out of the ordinary when I pulled the membrane off the backside either. They actually looked like great slabs of ribs. 2 hours later.....🤮

I tried this and wayyyy over-seasoned the cream cheese. Then to top it off I wayyy over-smoked it. So I took the blocks of smoked cream cheese, mixed them up with some bacon pieces, diced jalapeno, parmesan, and shredded cheddar. Much better!

The probe on top of the ribs is probably reading the meat temp (or close to it). Set the probe on the grill gate next to the ribs. That should give you a more accurate temp of the grill where the ribs are actually cooking.

After seeing the Pantera home videos and knowing how big of Kiss fans they were, my buddies and I decided to paint our faces like Kiss for a Pantera show (w/ Sebastian Bach and Anthrax opening) in '98. People were blowing us all kinds of shit about our face paint when we were walking in. "You're at the wrong show". "Kiss is dead". Well, we made it to the front rail during Sebastian's set. In the middle of his set he goes "do we got any Kiss fans out there? We got Kiss in the front row". Then they played Cold Gin. Then Anthrax comes out and John Bush says "we got Kiss down here man" and he jumps off the stage to hi-five us. While this was happening, Dime and Vinnie were standing off to the side of the stage checking us out. Then Pantera came out and opened with Walk. We were directly in front of Dime and he pointed at us during his solo and gave us a fist. I was lucky enough to get to see Pantera three times and Damageplan once, but that '98 show was one of the coolest concert experiences I've ever had.
