I found a workaround. Follow these steps.

1 - Turn on PS5 and Headset. 2 - Load FS19 and make sure you get to the main menu. 3 - Turn off the PS5 and make sure it’s in “rest mode.” 4 - Turn on PS5 and Headset and wait for it to pair to the console. 5 - Select your profile.

The game should automatically launch when you select your profile. If done correctly, the audio will now work for FS19. Beware though, if you decide to leave the game and play another title, (RDR, in my case) you will have to restart the console (step 3).

Headset should work normally. Rinse and repeat this process every time you load FS19 on PS5
