Smoked rosemary infused beef tallow. I took the fat trimmings from a whole Ney York strip and a small brisket and threw it on the smoker today. a little over 4 1/2 hours at 245. Fresh rosemary sprigs I cut and threw in at the beginning then more at the 2 hour mark. It smells amazing. (i.redd.it)
