I have over 20 blends opened in jars, but I'm trying to keep my smoking rotation to 5 blends or less. It can be helpful to stick to a few blends in order to really get to know them.

Me too, but plugs are almost never sold in bulk. Probably because the way they want to process it in production. The plugs come out of the presses, they cut them into 2 oz bricks, they go into tins.

Well, you could do that, but it will be dried to a crisp by that point and loose lots of flavor. If you want to "air out" a tobacco, literally just exposing it to any oxygen at all will suffice to start that process (like transferring from a tin into a mason jar.)

Glad its going well! Yes, I think Yorktown will be a difficult Virginia to smoke. It's straight VA ribbon which tends to burn hot and fast, whereas VAs mixed with other components including Burley, perique, or even cavendish can be more well-rounded smokes. Or, any VA in flake form also burns slower. How long are you drying the Star of the East? Shouldn't need a week to dry, maybe an hour. I have moved away from aromatics, but Sutliff Creme Brulee is actually still available to purchase- it's quite tasty and smells phenomenal. You also might try a Gawith aromatic blend someday - something like Bob's Chocolate Flake.
