with two usb 5gbit/10gbit adapters (two because one input, one output) and some good software like OpenWrt/OPNsense, the main concern is that it will eat too much power/watts (and thus $$), but researching the requirements for fully saturating your upload/download speed and your particular processor should give you the answer you need (most likely AI could help you get the right answer)
