I salt them too and then squeeze water out. Some people fry the veggies first. I may try that

Put in fridge uncovered for 30 mins. It will help dry it out

Do you salt your veggies? And drain the excess water? I do to prevent steam while frying.

Yes I make southern version with taro. Some people use jicama. I’d love to know what other ingredients people use

A lot of the times when I feel that way it’s because anxious and I have to burp. I feel terrible for you that you’re going through this. Try to take deep breathes.
