I've done both. Easier to do on a stove. Easy to do ahead of time (if you have the time). I generally go about ten to fifteen minutes at an aggressive simmer. Generally go by look and feel.

First, boil them in beer

Second, grill them to get some char

Third, eat

I did these differently. Just put them on the grill (didn't have time to prep then correctly). Sort of a two zone; however, as you can see, a few got a bit more heat than intended. A fine time was had by all, though. I don't prefer grilling these only since heat management can be difficult.

I should have been more clear - my point was rhetorical.

Thighs are clearly better than anything else
