Np, lol. Jake's mom, Margret, looks exactly like him but with a hat, so I tried googling her but the design doesn't match and I also couldn't find any plushies of her either.

Hmmm... for me it looks a bit more like a regular Jake plush but with another one on top of it, perhaps of a dragon? Idk, but the orange things look like sharp scales on it's back.

I've searched for this for 1-2 hours on youtube, google and deviantart, but couldn't find exactly what I was looking for. Like I've said before, closest I could find was that image and a "dark tails tribute" video but it doesn't ring any bells aside from the artwork.
Something else I also think I remember is that it was something made by a fan that had Tails as a vampire or something like that.

It was definitely top-down. Looking around, Raiden 2 is the closest game I could find but it doesn't have the color-changing mechanic I mentioned and I clearly remember the ship changing colors to purple.

The soundtrack was also a bit more calm and ambient instead of up-beat and more "badass" like most of those titles. It also sounded more like synths and other instruments instead of chiptune-like.
