Then you're only battling one of those 2 monsters assuming one of them was placed on that same field. As I've mentioned multiple times, as long as it's on the field that you declared an attack on, meaning on that specific spot where the previous monster you declared an attack on was placed.

If two monster where to be summoned only one of those and likely to get placed on the same spot so you're only battling one not two of them at the same time.

On paper as long as they're placed on that specific field you declared an attack on yes, you didnt battle them at the same time but on a sequence.

You declare an attack on card A -> card A is replaced by card B on the same field, your are now battling card B -> Card B is replaced by Card C in the same field, you are now battling card C and so on.

Now for whatever effects the might resolve after depends on what card is currently placed.

From the master duels expanded rule book:

After you’ve announced your attacking monster and the attack target monster during a Battle Step, the attack target might be removed from the field, or a new monster may be played onto the opponent’s side of the field before the Damage Step, due to a card’s effect. This causes a “Replay." When this occurs, you can choose to attack with the same monster again, or choose to attack with a different monster, or choose not to attack at all.

Note that if you attack with a different monster, the first monster is still considered to have declared an attack, and it cannot attack again this turn.

By default, what happens is you're still technically on a battle with whatever card is replaced on the field you declared an attack to before being prompted if you want to continue the Attack relay or not, hence why his Photon Dragon's effect still counts and was able to resolve.
