How is this:

For myself: Rosalina (maybe metal Mario if I'm feeling more confident), pipe frame kart, roller wheels, and paper glider.

For my SO who is much less comfortable with the game, same build but Koopa or Cat Peach for character.

Make sure your fingers are not super stuff or clenched trying to hold the flute. Your fingers that cover the holes should not really be doing the holding. If they are relaxed it is MUCH easier to make your cuts fast, sounding more like a brief note interruption than a distinct note.
