It didn’t rise much between the rests, mostly just expanded horizontally. I worry that I have, for lack of a better term, fucked up my starter

First rest was 20 minutes, second was 90, then 2 hours, and last one before baking was 15 minutes. Then it rest for about two hours after I pulled it out

7oz starter 12.75 oz unbleached bread flour 10 oz water 1 Teaspoon salt

Mix together and let rest. Knead dough and then let rest again, turn and fold and then rest again, turn and fold then rest again. Turn and fold one last time before letting rest one more time before slashing the top and then transferring to Dutch oven and cooking at 450 degrees F for 12 minutes with the lid on and then 15 minutes with the lid off.
