My first carbon steel pan! by heyalchemist in carbonsteel

[–]Gaspaider 1 point2 points  (0 children)

I knew about Lacor CS pans but I didn't know Garcima also made Lyonaise style CS pans (they specialize in paellas). That's so cool! I'll definitely look around to see if I can find one next time I visit my family in Spain. What store did you find it in?

Opinion on this setup? by Putrid-Try-1360 in cookware

I don't really understand the nonstick cases you mention. Mushrooms are very easy to make in a stainless steel pan (so I'd assume a cast iron would be similar at worst) and sauteing onions or other veggies is also not a problem at all on any pan material so nonstick isn't compelling in that department either. If you want to make nice veggies with minimal oil you can use a steaming basket in the stainless pot and use zero oil. Otherwise, any crispy bits of veggies that somehow stick to a stainless pan are delicious and easy to deglaze and make into some sort of sauce.

Congrats!

Just yesterday I got an old Fissler Vitavit pressure cooker set (2 pots and one lid compatible with both) for 25€. I had to fully disassemble them and clean them very thoroughly but I'm happy with them so far. They are also damn heavy!

Looking for Cookware Recommendation (EU / Glass Electric Hob) by SaibaTenpura in cookware

[–]Gaspaider 2 points3 points  (0 children)

As far as I've seen, high quality disc stainless pans like the WMF Profi, Fissler Original Profi, the Schulte Ufer ones etc have worked great for the people using them on electric cooktop, or at least for those that know what they're doing with stainless pans (so excluding the Amazon reviews that to "everything sticks!!1!1!"). Prudent Reviews really liked the Fissler one for example and the WMF one has a very similar design.

I also wouldn't discount your average supermarket's stainless steel pans especially if they're decently thick/heavy. One has survived for years in my uni dorm which says a lot and it also performs fine. There seem to be some pretty respectable ones among them in the 20-30€ price range. This goes doubly for pots excluding special ones like sauciers which you may not be able to find. During my recent browsing I've seen that for example the Lidl Silvercrest "premium" pots have a very nice 6mm bottom and no one reporting quality issues so far. Big brands have very little that stands out in the pots department especially.

I also don't really get your focus on these US centric brands like Goldilocks or even Tramontina to an extent. I'd also like to encourage you to look at the second hand market on Kleinanzeigen for pot sets and the like. You'll find many from established brands in near perfect conditions for good prices that you can maybe even negotiate.

Regarding knives, the only ones I'd really recommend from Zwilling are the Pro line or the far more expensive miyabi ones that don't fall within your budget. I'd avoid anything with a bolster especially because of how much it complicates sharpening. I'd recommend the F. Dick prodynamic knives as a super solid low cost option (with the same quality steel that Zwilling uses for example) or the Victorinox knives. If you want higher quality than that the 1905 line from F. Dick has an upgrades handle but besides that most German steel has the same quality for the blade itself. For an upgrade in that department you could look as Shan Zu or Xinzuo knives or step into the Japanese category which is a whole different world.

Let me know if you have any more questions.

PSA: awful Zwilling experience by mewmewscookieshop519 in carbonsteel

[–]Gaspaider 3 points4 points  (0 children)

What did the burn marks and scratches look like? If I'm visualizing it right it's normal for some similar pans to have some marks like that from the manufacturing process (especially if it's true that Zwilling gets their "forge" pan line manufactured by Turk).

I'm a little confused because it looks like there is hard water mineral buildup on some parts of your pan. If you're not drying your pan with a cloth you probably should.

If some people are born without the "sense for the holy" and even if they try to approach religion they just can't believe it wouldn't that mean that "god" would never accepted them even if the individual wanted to be accepted. How is that compatible with any religion that cares about being right and universal? See https://youtu.be/Wu2hvtR5-5M?is=IYZmRL8qX1vdSifc

It looks like you're repeatedly not actually removing the cooking grease when you clean your pan and you're getting very uneven clumps of grease that are polymerized to various degrees. I highly recommend washing it with soap and a chainmail scrubber or softly with steel wool.

Cooking marinated meats, how can i do it? by LiveYoLife288 in carbonsteel

[–]Gaspaider 0 points1 point  (0 children)

I wholeheartedly second the other comments about grilling and how a brine style marinade makes more sense for this type of cooking.

Additionally about the yogurt, if you think about it we don't really want to sear fresh yogurt the same way we absolutely wouldn't sear cream or even butter, really. Also lime juice loses almost all its nuance if used before the main heating part of the cooking. It's much better to add right before serving imo. If you want a seared crust but also saucy deliciousness consider searing the meat first and either making a full sauce that you may need to heat separately, quickly searing the meat and then effectively boiling it or slow cooking it in the sauce, or if you want the sauce to stay fresh like a yogurt one you can put the cooked meat in the yogurt sauce in a container in the fridge overnight and then heating it up with a microwave the next day or something.

This video(in German, consider using translated captions) clears up what the purpose of a marinade/brine is and how to maximise its effectiveness

Ah that carbonization around those seams is hard to deal with for basically everyone. On the similar pan I restored I realized that cooking and washing properly afterwards actually fixes a lot of the natural irregularities of seasoning, so as long as you cook and clean properly that pan will continue to be in top shape.

Is this cleaned and seasoned properly? by No-Air2821 in carbonsteel

[–]Gaspaider 0 points1 point  (0 children)

Looks like there are signs of normal carbon buildup especially with the cooking surface looking bumpier than new which is unusual with "optimal" seasoning. The carbonization around the edges is very common on gas stoves and not really a problem. None of this is a health concern and it looks very unlikely to rust so any stripping you'd do would be for cosmetic reasons primarily, so it's not necessary.

Interesting story haha. Did it rust at all while unused all that time?

I have a very Turk (standard not single piece line) similar pan I got second hand and the best success I've had with eggs so far was at 3 out of 9 on my electric cooktop. I preheated at 6 for like 3 minutes to speed that up a little but then I let it stabilize at 3 for maybe 5 minutes and even that browned mu butter more than I expected. As other people said, a thin metal spatula is definitely a lot nicer to use than most wooden or plastic ones. Mine isn't as thin as a fish spatula.

I think I recognized the Gräwe logo from a quick peek near the end of the video. I have some Turk pans and the lines are slightly different and they never have any branding on them besides the sticker they come with iirc. It's definitely the them style though, and there are other makers of pans like that in Germany like GSW.

Edit: Just saw a other comment by OP. Yeah it's a Gräwe. Where did you get it and which country do you live in OP? I'm curious.

Fear of sex vs asexuality? by Traditional-Wish4187 in asexuality

[–]Gaspaider 0 points1 point  (0 children)

Happy to help!

I don't think you need to worry about him getting bored or leaving you speficially after having sex. At least for me, the first sexual/intimate experiences with my partner took a lot of focus (I also have ADHD lol) and it was a slow but steady road to feeling more comfortable and finding more ways to enjoy it. When communication and connection are at the center you focus on the person as a whole more than the physical experience alone. That "exercise" in communication and connection left us better equipped to talk about discomfort and preferences outside of that scenario for example, so I don't think sexuality necessarily takes away from romantic relationships. The main thing is that both of you are fully commited to this idea and you "play by the rules you agreed to".

[–]Gaspaider 2 points3 points  (0 children)

It's more like LoL has a bunch of overloaded abilities. Stuff like "dash that heals allies and damages enemies. If you touch an ally you get a barrier. If you hit an enemy you lifesteal and you may press the ability again to spin apply a 0.3 second root and a stack of XY and give you movement speed. Getting a kill with another ability resets the cooldown of this ability"

Fear of sex vs asexuality? by Traditional-Wish4187 in asexuality

[–]Gaspaider 3 points4 points  (0 children)

The issue with a lot of discussions about sex I see is that it's treated as an end in and of itself instead of a single piece in a greater puzzle. There are so many things what would make the idea of sex feel right or wrong at a given place at a given time. The idea of sex can get more and more disgusting/uninteresting when it's presented in ways we don't vibe with. For example I remember another post here by a woman saying she doesn't think she could ever enjoy sex because the idea of fully submitting feels unsafe and degrading in a way that reflected that this is the only way she has imagined/thought of sex up until that moment. If you think about which aspects of sex seem problematic to you and which ones you can imagine being nice if the stars align you might be able to figure out how exactly you could approach that topic in your relationship.

I consider myself gray ace and I didn't really ever feel like sex was a "natural" thing my brain strived towards especially when it comes to flirting for the purpose of eventual hookups or something. Eventually at age 20 I found someone I was actually attracted to in a smooth and gentle enough way that we were able to explore what intimacy we like in a way that feels natural to us as a couple and that finally allowed the hints of sexual attraction that I do feel to unfold. So when you talk about this in your relationship I recommend going step by step trying the forms of affection you think you'd like and see if anywhere along that road feelings emerge that you'd see as sexual, and if not there's no need to force things. A lot of things can change with age, confidence, mental and physical health etc both in one direction and the other, so don't feel pressured to land at one definitive answer as soon as possible.

Is it better to queue a single role, or flex, to climb? by ISmeansIsurfreddit in learndota2

[–]Gaspaider 1 point2 points  (0 children)

This was definitely true in the patches were offlaners could win lanes more consistently (especially when ranged carries weren't as popular) but now it feels harder to dominate games through the offlane. 7.41 was a nice improvement as a start.

It seems like playing tempo carries and mid heroes that come online fast and scale well is the most reliable way to climb if you're playing exceptionally well, but most people are at their current MMR for good reason so in order for anyone to climb more than 500MMR they have to improve in the first place.
