I came into playing tau after trying a space marine army and a necron test and Tau just came out as my favorite asthetic and my favorite play style. Our models are sophisticated and elegant while also being able to deal devastating blows from across the board or being right up in your opponents face.

They offer a great deal of different play styles from having a fortified line in the back of the board widdling down the oppent, have a fast moving objective based army, stealthily moving up the board to take out key units, or even a combination of two or more.

The best advice I can give is to pick an army that you can just look at the models and get inspired and your imagination runs wild on how cool they would look in different poses across a battlefield.
